- 1 head of garlic
- 30 grams olive oil
- 50 grams butter (softened)
- 200 grams all-purpose flour
- 200 grams mozzarella cheese (shredded)
- 7 grams active dry yeast
- 90 grams warm milk
- 1 tablespoon honey
- 2 egg yolks
- Sprinkle of salt
- 50 grams bread flour
- 20 grams milk powder (optional)
- 1 1/2 teaspoon salt
- 1 tablespoon sugar
- Garlic butter we made previously
- 1 egg
Instructions
- Roast the garlic by drizzling it with olive oil, wrapping it in foil, and baking at 160°C (320°F) for about 2 hours.
- Combine warm milk, yeast, and honey in a bowl; let it sit until frothy (about 10 minutes).
- In a mixing bowl, mix flours, salt, butter, yolks, and the yeast mixture until combined.
- Knead the dough for about 15–20 minutes until smooth.
- Let the dough rise in a warm area for approximately 1.5 hours until doubled.
- Roll out the dough and spread prepared garlic butter before adding mozzarella cheese.
- Roll tightly and cut into portions; let them proof again for another 30 minutes.
- Bake at 175°C (350°F) for about 20–25 minutes or until golden brown.
