  • 1 large carrot (diced)
  • 1 stalk celery (diced)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)

  • 2 cups butternut squash (diced)
  • 14 ounces great northern beans (drained and rinsed)
  • 10 ounces ground turkey (browned and crumbled)
  • 2 ½ cups chicken broth
  • ½ cup heavy cream
  • 2 cups fresh kale (chopped)

Instructions

  1. In a saute pan over medium-high heat, cook ground turkey until browned. Drain excess oil.
  2. In a Dutch oven, heat olive oil over medium heat and sauté carrot, onion, and celery for about 3-4 minutes.
  3. Add garlic and thyme; sauté for an additional minute until fragrant.
  4. Stir in diced butternut squash, drained beans, browned turkey, and chicken broth; bring to a boil.
  5. Reduce heat to medium-low and simmer for 15 minutes until squash is tender.
  6. Add heavy cream and chopped kale; stir to combine.
  7. Simmer for another 4-5 minutes until kale wilts.
  8. Serve hot with desired toppings.
