  • 4 cloves garlic (minced)
  • ¼ cup finely diced white onion
  • 1 ½ cups medium grain rice
  • 1 bag (10 ounces) frozen corn (no need to thaw)
  • 3 cups boiling water
  • 1 tablespoon chicken bouillon
  • Chopped parsley or sliced green onion for garnish (optional)

Instructions

  1. Heat olive oil and butter in a large skillet over medium-low heat; sauté minced garlic and onion until fragrant.
  2. Add medium grain rice and toast until golden brown, about 5 minutes. Stir in frozen corn.
  3. Pour in boiling water and chicken bouillon; stir well.
  4. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes without lifting the lid.
  5. Turn off heat, let sit covered for another 5 minutes, then fluff with a fork before serving.
