  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 3 large eggs
  • 1½ teaspoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder
  • ¾ teaspoon salt
  • 6 ounces semisweet chocolate (for ganache)
  • ¾ cup heavy whipping cream
  • Fleur de sel (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. In a medium saucepan, melt the semisweet chocolate and butter over low heat until smooth.
  3. Remove from heat; stir in granulated and brown sugars until well combined. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. In another bowl, sift together flour, cocoa powder, and salt. Fold the dry mixture into the wet ingredients until just combined.
  5. Pour batter into prepared pan, smoothing the top. Bake for 20–25 minutes until a toothpick comes out with moist crumbs.
  6. Let cool completely before cutting into small squares or rectangles for petit fours.
  7. For ganache, heat heavy cream until simmering and pour over chopped chocolate. Let sit for a few minutes before stirring until smooth.
  8. Coat each brownie square with ganache and sprinkle lightly with fleur de sel. Allow to set before serving.
