Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat; simmer for 5 minutes until softened. Let cool.
- In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey if desired.
- Spoon yogurt into silicone molds or mini muffin tins, filling three-quarters full. Add cooled blueberry compote on top and swirl gently with a toothpick.
