Ingredients

  • 1 cup Greek yogurt (full-fat)
  • 1/2 cup blueberries (fresh or frozen)
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract

Instructions

  1. In a small saucepan, combine blueberries, honey, and lemon juice over medium heat; simmer for 5 minutes until softened. Let cool.
  2. In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness with more honey if desired.
  3. Spoon yogurt into silicone molds or mini muffin tins, filling three-quarters full. Add cooled blueberry compote on top and swirl gently with a toothpick.
  4. Freeze for at least 3 hours until firm. Remove from molds and store in an airtight container.
