  2. In a large bowl, mix 335g water, starter, and flour until combined.
  3. Cover and let rest for 20-30 minutes (autolyse).
  4. Add remaining water and salt; knead lightly for 1-2 minutes.
  5. Allow bulk fermentation at room temperature for 30 minutes; incorporate blueberries and lemon zest.
  6. Stretch and fold the dough every 30-40 minutes over the next few hours.
  7. Shape the dough into a round loaf and place it seam side up in a proofing basket.
  8. Let rise for about 2 hours at room temperature or refrigerate for up to 72 hours.
  9. Preheat your oven to ensure it's ready before baking.
  10. Bake at 500°F (260°C) covered for the first 20 minutes, then uncover and bake at 400°F (200°C) until dark brown (30-35 minutes).
