- Let the dough rise for about three hours, reshaping every hour with stretch and folds.
- Shape into a ball and place seam-side up in a banneton; cover and refrigerate overnight (8–12 hours).
- Preheat your oven to 450°F (232°C), then bake the dough in a hot Dutch oven for 25 minutes covered, followed by another 25 minutes uncovered.
