  • 2 cups fresh blackberries
  • 3 tbsp balsamic vinegar
  • 6 tbsp sugar
  • 2 tbsp lemon juice
  • kosher salt
  • 300 g double cream brie cheese
  • 1 tbsp chopped fresh thyme
  • 8 slices sourdough bread
  • Butter (as needed)

Instructions

  1. Prepare the blackberry balsamic jam by simmering blackberries, balsamic vinegar, sugar, lemon juice, and salt in a saucepan for about 7-10 minutes until thickened. Allow to cool.
  2. Slice brie cheese into ½ inch pieces.
  3. In a skillet over medium heat, butter one side of four sourdough slices and place them butter-side down. Top with brie and sprinkle with thyme; cook until the bread is golden brown.
  4. Spread cooled blackberry jam on the other four slices and place them jam-side down on top of the melted cheese.
  5. Butter the tops of these sandwiches and flip carefully to cook until both sides are golden and crispy.
  6. Let cool slightly before slicing and serving.
