Ingredients
- 2 cups fresh blackberries
- 3 tbsp balsamic vinegar
- 6 tbsp sugar
- 2 tbsp lemon juice
- kosher salt
- 300 g double cream brie cheese
- 1 tbsp chopped fresh thyme
- 8 slices sourdough bread
- Butter (as needed)
Instructions
- Prepare the blackberry balsamic jam by simmering blackberries, balsamic vinegar, sugar, lemon juice, and salt in a saucepan for about 7-10 minutes until thickened. Allow to cool.
- Slice brie cheese into ½ inch pieces.
- In a skillet over medium heat, butter one side of four sourdough slices and place them butter-side down. Top with brie and sprinkle with thyme; cook until the bread is golden brown.
- Spread cooled blackberry jam on the other four slices and place them jam-side down on top of the melted cheese.
- Butter the tops of these sandwiches and flip carefully to cook until both sides are golden and crispy.
- Let cool slightly before slicing and serving.
