  • 2 lbs beef chuck roast
  • 12 corn tortillas
  • 2 cups shredded cheese (Monterey Jack or cheddar)
  • Fresh cilantro, chopped
  • Red onion, diced
  • 2 cups beef broth
  • 2 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 4 garlic cloves, minced
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a slow cooker or Dutch oven, combine beef, onions, garlic, beef broth, chiles, vinegar, cumin, oregano, paprika, salt, and pepper. Cook on low for 3 hours until tender.
  2. Shred the meat after cooking.
  3. Preheat oven to 375°F (190°C). Dip each tortilla in birria broth to soften.
  4. Fill tortillas with shredded beef and roll tightly. Place seam-side down in a baking dish.
  5. Top with cheese and bake for about 20 minutes until bubbly.
