Ingredients
- 2 lbs beef chuck roast
- 12 corn tortillas
- 2 cups shredded cheese (Monterey Jack or cheddar)
- Fresh cilantro, chopped
- Red onion, diced
- 2 cups beef broth
- 2 dried guajillo chiles, stems and seeds removed
- 2 dried ancho chiles, stems and seeds removed
- 4 garlic cloves, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a slow cooker or Dutch oven, combine beef, onions, garlic, beef broth, chiles, vinegar, cumin, oregano, paprika, salt, and pepper. Cook on low for 3 hours until tender.
- Shred the meat after cooking.
- Preheat oven to 375°F (190°C). Dip each tortilla in birria broth to soften.
- Fill tortillas with shredded beef and roll tightly. Place seam-side down in a baking dish.
- Top with cheese and bake for about 20 minutes until bubbly.
