Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5-7 minutes per side until golden brown. Remove from skillet.
  2. In a saucepan, boil chicken broth and salt. Add rice, reduce heat to low, cover, and simmer for 15-20 minutes until tender.
  3. In the same skillet, melt butter over medium heat. Whisk in flour to create a roux for 1-2 minutes. Gradually add milk and chicken broth while whisking until thickened. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  4. Return the chicken to the skillet with the sauce and serve over rice garnished with fresh parsley.
