- 1 tbsp olive oil
- Pinch of kosher salt
- 5 oz baby arugula or mixed greens
- 1 large ball of burrata
- ¼ cup pine nuts, toasted
- ¼ red onion, thinly sliced (optional)
- Flaky salt + freshly cracked black pepper
- Dressing: 2 tbsp extra-virgin olive oil
- 1 tbsp balsamic glaze
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1 tsp lemon juice
Instructions
- Preheat oven to 400°F (200°C). Wrap beets in foil and roast on a baking sheet for 45–60 minutes until tender. Cool slightly, peel, and slice.
- While beets cool, toast pine nuts in a dry skillet over medium-low heat until golden brown.
- In a mixing bowl, whisk together olive oil, balsamic glaze, Dijon mustard, honey (or maple syrup), and lemon juice. Season with salt and pepper.
- On a platter or individual plates, layer arugula, beet slices, torn burrata pieces, toasted pine nuts, and red onion (if using). Drizzle with dressing before serving.
