Ingredients

  • 1 tbsp olive oil
  • Pinch of kosher salt
  • 5 oz baby arugula or mixed greens
  • 1 large ball of burrata
  • ¼ cup pine nuts, toasted
  • ¼ red onion, thinly sliced (optional)
  • Flaky salt + freshly cracked black pepper
  • Dressing: 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic glaze
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast on a baking sheet for 45–60 minutes until tender. Cool slightly, peel, and slice.
  2. While beets cool, toast pine nuts in a dry skillet over medium-low heat until golden brown.
  3. In a mixing bowl, whisk together olive oil, balsamic glaze, Dijon mustard, honey (or maple syrup), and lemon juice. Season with salt and pepper.
  4. On a platter or individual plates, layer arugula, beet slices, torn burrata pieces, toasted pine nuts, and red onion (if using). Drizzle with dressing before serving.
