Ingredients
- 3-pound boneless chuck roast
- 5 ounces thick-cut bacon
- 1 medium yellow onion
- 1 large carrot
- 4 garlic cloves
- 3 cups red wine (Burgundy or Pinot Noir)
- 8 ounces cremini mushrooms
- 8 ounces pearl onions
Instructions
- Preheat your oven to 350°F.
- Season beef cubes with salt and pepper. In a Dutch oven, cook bacon over medium-low heat until crisp; set aside.
- Brown the beef in batches in the bacon fat until browned on all sides. Remove and set aside.
- Sauté chopped onion and carrot in the same pot until softened, then add garlic, tomato paste, bay leaf, thyme, and flour.
- Deglaze with red wine and return bacon and beef to the pot. Cover and roast for about two and a half hours.
- Meanwhile, prepare mushrooms and pearl onions in a skillet until caramelized.
