  • 3-pound boneless chuck roast
  • 5 ounces thick-cut bacon
  • 1 medium yellow onion
  • 1 large carrot
  • 4 garlic cloves
  • 3 cups red wine (Burgundy or Pinot Noir)
  • 8 ounces cremini mushrooms
  • 8 ounces pearl onions

Instructions

  1. Preheat your oven to 350°F.
  2. Season beef cubes with salt and pepper. In a Dutch oven, cook bacon over medium-low heat until crisp; set aside.
  3. Brown the beef in batches in the bacon fat until browned on all sides. Remove and set aside.
  4. Sauté chopped onion and carrot in the same pot until softened, then add garlic, tomato paste, bay leaf, thyme, and flour.
  5. Deglaze with red wine and return bacon and beef to the pot. Cover and roast for about two and a half hours.
  6. Meanwhile, prepare mushrooms and pearl onions in a skillet until caramelized.
  7. Serve stew topped with mushrooms and onions, garnished with parsley.
