  • 2.5 lb beef chuck, cut into chunks
  • 3/4 tsp salt
  • 3/4 tsp black pepper
  • 3 garlic cloves, minced
  • 2 onions, chopped
  • 6 oz bacon, diced
  • 3 tbsp flour
  • 440ml Guinness beer
  • 4 tbsp tomato paste
  • 3 cups chicken or beef broth
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 3 sprigs thyme

Instructions

  1. Cut beef into chunks and season with salt and pepper.
  2. Heat oil in a heavy pot over high heat; brown beef in batches and set aside.
  3. Reduce heat to medium; sauté garlic and onions until softened.
  4. Add bacon; cook until browned.
  5. Stir in carrots and celery.
  6. Sprinkle flour over the mixture; stir for one minute.
  7. Pour in Guinness, broth, and tomato paste; mix well.
  8. Return browned beef to the pot along with juices.
  9. Add bay leaves and thyme; cover and simmer for about two hours until beef is tender.
  10. Remove lid; simmer for an additional 30-45 minutes until sauce thickens.
