  • ½ cup BBQ sauce
  • 1 large head romaine lettuce, chopped
  • ½ cup cooked black beans
  • 1 medium ear corn (kernels removed)
  • 1 cup cherry tomatoes, halved
  • 1 cup Monterey Jack cheese, shredded
  • ½ cup low-fat buttermilk
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ cup packed cilantro leaves
  • 1 medium jalapeño pepper (seeds removed)
  • 1 (1-ounce) package Hidden Valley ranch seasoning
  • 1 clove garlic (chopped)

Instructions

  1. Prepare the dressing by whisking together buttermilk, mayonnaise, sour cream, cilantro, jalapeño, ranch seasoning, and garlic until smooth.
  2. Cook chicken thighs in a grill or skillet over medium heat for about 5 minutes per side or until fully cooked. Brush with BBQ sauce during the last minute.
  3. Chop the romaine lettuce and other vegetables.
  4. In a large bowl, combine chopped lettuce with black beans, corn kernels, cherry tomatoes, cheese, and crushed tortilla chips. Slice the cooked chicken and place on top.
  5. Drizzle with cilantro ranch dressing before serving.
