  • 1 ½ pounds boneless skinless chicken tenderloins
  • 1 cup buttermilk
  • 2 cups panko breadcrumbs
  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha

Instructions

  1. Prepare the bang bang sauce by mixing mayonnaise, Thai sweet chili sauce, Sriracha in a bowl until smooth. Set aside.
  2. Marinate chicken tenderloins in buttermilk for at least 15 minutes.
  3. Set up a breading station with flour mixed with cornstarch and spices in one bowl, beaten egg with Sriracha in another, and panko breadcrumbs in a third.
  4. Coat each tenderloin first in the flour mixture, then dip into the egg mixture, and finally coat with panko.
  5. Heat canola oil in a deep fryer or pot to about 350°F (175°C). Fry chicken pieces in batches for 4-6 minutes until golden brown and cooked through.
  6. Serve hot with the bang bang sauce drizzled on top or on the side.
