Ingredients

Scale
  • 3/4 cup milk (warmed to 110°F)
  • 2 1/4 tsp active dry yeast
  • 1 large egg (lightly beaten)
  • 2/3 cup mashed bananas
  • 5 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter (for filling)
  • 3/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 4 oz cream cheese (for icing)
  • 4 tbsp unsalted butter (for icing)
  • 1 cup powdered sugar (for icing)
  • 1 tsp vanilla extract (for icing)

Instructions

  1. In a bowl, mix warmed milk with yeast and let sit until bubbly. Add beaten egg, mashed bananas, salt, sugar, and butter; mix well.
  2. Gradually incorporate flour until a soft dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
  3. Place dough in a greased bowl, cover, and let rise in a warm area for about 60 minutes or until doubled in size.
  4. Roll out dough into a rectangle and spread softened butter evenly over it. Sprinkle with brown sugar and cinnamon mixture.
  5. Distribute sliced bananas over the filling, roll up tightly into a log shape, and slice into 12 pieces.
  6. Place on a baking sheet lined with parchment paper and let rise for an additional 30 minutes.
  7. Bake at 350°F for approximately 30 minutes or until golden brown.
  8. For icing, beat together cream cheese, butter, powdered sugar, and vanilla until smooth; drizzle over warm rolls.
