  • 23 cups broccoli florets
  • 12 lbs. salmon, cut into 24 filets
  • 68 tablespoons butter
  • 1/2 cup heavy cream
  • Juice of 1 lemon
  • Fresh thyme, parsley, or basil
  • Olive oil, for roasting
  • Garlic powder, for seasoning
  • Salt and pepper, to taste
  • 12 cloves garlic, minced
  • 1 shallot, minced
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss potato pieces with olive oil, garlic powder, salt, and pepper on the baking sheet. Roast for about 25 minutes until lightly browned.
  3. While the potatoes roast, melt butter in a saucepan over medium-low heat; add minced garlic, shallots, and thyme, cooking until softened.
