Ingredients
- 2 large baking potatoes
- 200g block of feta cheese
- 2 tablespoons olive oil
- 1 head of garlic
- Fresh basil (for garnish)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 0.5 teaspoon red chili flakes
- 1 lemon, halved
- 1 tbsp honey
Instructions
- Preheat the oven to 200C (390F).
- Wash and cube the potatoes; par-boil in salted water for 6–8 minutes, then drain.
- Toss par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
- Wrap garlic in foil; place it with potatoes in the oven.
- Roast for 30–40 minutes until golden brown and crispy.
- Add feta cheese and squeeze half a lemon over it; roast for another 15 minutes.
- Squeeze roasted garlic into the potatoes; mix in basil and remaining lemon juice.
- Drizzle honey over the top and sprinkle with red chili flakes before serving.
