  • 2 large baking potatoes
  • 200g block of feta cheese
  • 2 tablespoons olive oil
  • 1 head of garlic
  • Fresh basil (for garnish)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red chili flakes
  • 1 lemon, halved
  • 1 tbsp honey

Instructions

  1. Preheat the oven to 200C (390F).
  2. Wash and cube the potatoes; par-boil in salted water for 6–8 minutes, then drain.
  3. Toss par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
  4. Wrap garlic in foil; place it with potatoes in the oven.
  5. Roast for 30–40 minutes until golden brown and crispy.
  6. Add feta cheese and squeeze half a lemon over it; roast for another 15 minutes.
  7. Squeeze roasted garlic into the potatoes; mix in basil and remaining lemon juice.
  8. Drizzle honey over the top and sprinkle with red chili flakes before serving.
