Description

  • 1 lb diced bacon
  • 1 cup diced red onions
  • 1 cup diced jalapenos (seeds removed for milder flavor)
  • 2 tbsp minced garlic
  • ½ cup maple syrup
  • ¼ cup apple cider vinegar
  • 1 tsp paprika

Instructions

  1. In a large saucepan over medium heat, cook the diced bacon until crispy. Transfer to paper towels to drain excess grease, leaving one tablespoon in the pan.
  2. Add the onions, jalapenos, and garlic into the pan and sauté until the onions are translucent.
  3. Reduce heat to low; stir in maple syrup, apple cider vinegar, paprika, and cooked bacon. Mix well.
  4. Simmer gently for about one hour, stirring occasionally. If too thick, add a small amount of water.
  5. Allow to cool before transferring to sealable jars. Refrigerate for at least one hour before serving.
