- 1 lb cooked shrimp, peeled and deveined
- ½ cup cucumber, diced
- ½ cup tomatoes, chopped
- 1 small jalapeño, deseeded and finely chopped
- ¼ cup red onion, diced
- 2 tbsp cilantro, chopped
- ½ cup + 2 tbsp chunky salsa (variety of your choice)
- 1 large avocado, diced
- Juice of 2 limes
- Salt & pepper to taste
Instructions
- Dry the shrimp with a paper towel and cut into bite-sized pieces.
- In a large mixing bowl, combine shrimp with cucumber, tomatoes, jalapeño, red onion, and cilantro.
- Add chunky salsa and lime juice; gently mix until well combined.
- Season with salt and pepper to taste; adjust flavors as needed.
- Just before serving, top with diced avocado. Serve immediately or chill for up to an hour before adding avocado.
