- 2 small mangoes (peeled and cubed)
- 4 whole avocados (peeled and cubed)
- ½ small red onion (finely diced)
- 1 cup cherry tomatoes (halved)
- Juice of 1 lemon
- 1 large clove garlic (mashed)
- ¾ tsp salt
- 2 tbsp cilantro (finely chopped)
- 2–3 tbsp olive oil
Instructions
- Prepare all ingredients: finely dice onions, mince garlic, peel and cube avocados and mangoes, and halve cherry tomatoes.
- In a large mixing bowl, combine all prepared ingredients along with lemon juice and olive oil.
- Gently toss until well mixed. Taste and adjust seasoning as needed.
- Serve immediately or chill for 30 minutes for enhanced flavor.
