Ingredients

  • 2 small mangoes (peeled and cubed)
  • 4 whole avocados (peeled and cubed)
  • ½ small red onion (finely diced)
  • 1 cup cherry tomatoes (halved)
  • Juice of 1 lemon
  • 1 large clove garlic (mashed)
  • ¾ tsp salt
  • 2 tbsp cilantro (finely chopped)
  • 23 tbsp olive oil

Instructions

  1. Prepare all ingredients: finely dice onions, mince garlic, peel and cube avocados and mangoes, and halve cherry tomatoes.
  2. In a large mixing bowl, combine all prepared ingredients along with lemon juice and olive oil.
  3. Gently toss until well mixed. Taste and adjust seasoning as needed.
  4. Serve immediately or chill for 30 minutes for enhanced flavor.
