  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (Cajun or Andouille)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Olive oil, salt, pepper, and smoked paprika

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss butternut squash with olive oil, salt, and pepper; roast on a parchment-lined baking sheet for 15-20 minutes until tender.
  3. Meanwhile, toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until crispy.
  4. Cook bow tie pasta according to package directions; drain and reserve some pasta water.
  5. In a large skillet over medium heat, sauté sliced sausage until browned; remove from skillet.
  6. In the same skillet, cook minced garlic until fragrant; add butter to melt.
  7. Add drained pasta to skillet; toss to coat in sauce along with roasted vegetables and sausage.
  8. Adjust seasoning if needed before serving.
