- 1/2 cup raisins (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3–4 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a large mixing bowl, beat the oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently to combine. Fold in grated carrots and any optional add-ins.
- Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
- For the frosting, beat cream cheese and butter until smooth. Gradually mix in powdered sugar and vanilla.
- Once cakes are cool, frost between layers and on top/sides of the cake.
