  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 34 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, beat the oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently to combine. Fold in grated carrots and any optional add-ins.
  5. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For the frosting, beat cream cheese and butter until smooth. Gradually mix in powdered sugar and vanilla.
  7. Once cakes are cool, frost between layers and on top/sides of the cake.
