  • ¼ cup finely diced onions
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon ground ginger
  • ⅛ teaspoon red pepper flakes (optional)
  • 6 chicken thighs
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) for even cooking.
  2. In a mixing bowl, whisk together apricot jam, onions, soy sauce, honey, Dijon mustard, apple cider vinegar, garlic, ginger, and red pepper flakes until well blended.
  3. Place chicken thighs skin-side up in a baking dish and pour half of the glaze over them.
  4. Bake for 25 minutes; then baste with remaining glaze and return to oven for another 15 minutes or until chicken reaches an internal temperature of 165°F (74°C).
