  • 250 grams gala apples (peeled and diced)
  • 184 grams unsalted butter (browned)
  • 100 grams dark brown sugar
  • 100 grams granulated sugar
  • 250 grams all-purpose flour
  • 1 egg (+ 1 egg yolk, room temperature)
  • 1 ½ teaspoons ground cinnamon

Instructions

  1. Prepare the apples by tossing diced gala apples with dark brown sugar, cinnamon, salt, and lemon juice. Sauté until caramelized and chill.
  2. Brown the butter until golden and let it cool.
  3. Mix dry ingredients: flour, baking soda, cream of tartar, cinnamon, sea salt, and cornstarch.
  4. In a bowl, combine cooled brown butter with sugars and vanilla; add eggs and mix well.
  5. Fold in caramelized apples before gradually incorporating dry ingredients to form dough. Chill for 2–3 hours.
  6. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll chilled dough into balls, coat in cinnamon sugar, place on baking sheet, and bake for 12–14 minutes.
