Ingredients
- 250 grams gala apples (peeled and diced)
- 184 grams unsalted butter (browned)
- 100 grams dark brown sugar
- 100 grams granulated sugar
- 250 grams all-purpose flour
- 1 egg (+ 1 egg yolk, room temperature)
- 1 ½ teaspoons ground cinnamon
Instructions
- Prepare the apples by tossing diced gala apples with dark brown sugar, cinnamon, salt, and lemon juice. Sauté until caramelized and chill.
- Brown the butter until golden and let it cool.
- Mix dry ingredients: flour, baking soda, cream of tartar, cinnamon, sea salt, and cornstarch.
- In a bowl, combine cooled brown butter with sugars and vanilla; add eggs and mix well.
- Fold in caramelized apples before gradually incorporating dry ingredients to form dough. Chill for 2–3 hours.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll chilled dough into balls, coat in cinnamon sugar, place on baking sheet, and bake for 12–14 minutes.
