  • 45 lb pork shoulder roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons Dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic, top sliced off opposite of the root end
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick slices
  • 2 firm apples, peeled and cut into wedges
  • kosher salt
  • freshly cracked black pepper

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Trim excess fat from pork and season with salt and pepper.
  3. Sear pork in a Dutch oven until browned on all sides.
  4. Whisk together cider, chicken stock, mustard, and onion; pour over pork.
  5. Add herb bundle and garlic; cover and braise in the oven for about three hours.
  6. Add sliced onion and apples; cover and bake for another 30-45 minutes until tender.
  7. Let rest for 30 minutes before serving.
