  • 1 1/2 tsp cream of tartar
  • 1 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder

  • 12 Tbsp unsalted butter, cold, cut into cubes
  • 1 1/4 cup dark brown sugar, packed
  • 1/3 cup apple butter
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 2 Tbsp sugar (for coating)
  • 1 tsp cinnamon (for coating)
  • 2 Tbsp unsalted butter (for glaze)
  • 1 cup powdered sugar (for glaze)
  • 2 Tbsp apple butter (for glaze)
  • 1/2 tsp vanilla extract (for glaze)
  • pinch of salt (for glaze)
  • splash of milk to thin out (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together dry ingredients: all-purpose flour, cake flour, cream of tartar, cinnamon, salt, baking soda, baking powder, and nutmeg.
  3. In a stand mixer, cream cold butter and dark brown sugar until fluffy. Add apple butter, egg yolk, and vanilla until well blended.
  4. Gradually incorporate the dry mixture until just combined. Chill dough for at least 30 minutes.
  5. Roll dough into balls and coat in a mixture of cinnamon and sugar before placing them on prepared sheets.
  6. Bake for 10–11 minutes; they will remain soft but set. Cool on the pan before transferring to a rack.
  7. For the glaze, whisk melted butter with powdered sugar, apple butter, vanilla extract; drizzle over cooled cookies.
