- 2 cups all-purpose flour
- 2/3 cup cake flour
- 1 1/2 tsp cream of tartar
- 1 1/2 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp nutmeg
- 12 Tbsp unsalted butter, cold, cut into cubes
- 1 1/4 cup dark brown sugar, packed
- 1/3 cup apple butter
- 1 large egg yolk
- 2 tsp vanilla extract
- 2 Tbsp sugar (for coating)
- 1 tsp cinnamon (for coating)
- 2 Tbsp unsalted butter (for glaze)
- 1 cup powdered sugar (for glaze)
- 2 Tbsp apple butter (for glaze)
- 1/2 tsp vanilla extract (for glaze)
- pinch of salt (for glaze)
- splash of milk to thin out (if needed)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together dry ingredients: all-purpose flour, cake flour, cream of tartar, cinnamon, salt, baking soda, baking powder, and nutmeg.
- In a stand mixer, cream cold butter and dark brown sugar until fluffy. Add apple butter, egg yolk, and vanilla until well blended.
- Gradually incorporate the dry mixture until just combined. Chill dough for at least 30 minutes.
- Roll dough into balls and coat in a mixture of cinnamon and sugar before placing them on prepared sheets.
- Bake for 10–11 minutes; they will remain soft but set. Cool on the pan before transferring to a rack.
- For the glaze, whisk melted butter with powdered sugar, apple butter, vanilla extract; drizzle over cooled cookies.
