Ingredients
- 3 large sweet potatoes (peeled and cubed)
- 1 large onion (finely chopped)
- 2 garlic cloves (minced)
- 1 red pepper (chopped)
- 400 g can chopped tomatoes
- 900 ml hot vegetable stock
- 2–3 tbsp smooth peanut butter
- 1 tsp cumin seeds
- 1/2 tsp chilli flakes
- 2 tsp finely grated fresh ginger
- 1 tsp sugar
- 1 large parsnip (peeled and cubed)
- Salt and pepper to season
- Olive oil to fry
- Handful finely chopped roasted peanuts to garnish (optional)
Instructions
- Gather and prep all ingredients: chop onions, mince garlic, cube sweet potatoes and parsnip.
- Heat olive oil in a large pot over medium heat. Sauté cumin seeds, chilli flakes, and ginger until fragrant.
- Add onions, garlic, and sugar; cook until softened.
- Stir in cubed sweet potatoes, parsnip, and chopped tomatoes for about two minutes.
- Pour in hot vegetable stock; bring to a boil then simmer for 15 minutes or until veggies are tender.
- Blend until smooth using a blender or immersion blender. Stir in peanut butter; season with salt and pepper before serving.
