  • 1/4 cup white chocolate chips (optional)

Instructions

  1. Prepare the filling by mixing softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
  2. In another bowl, cream together softened butter and granulated sugar until light and fluffy. Mix in the egg and vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt; gradually add to the wet mixture until combined.
  4. Fold in crushed freeze-dried strawberries and optional white chocolate chips.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized portions of dough onto the baking sheet; create an indentation in each cookie.
  7. Fill indents with cheesecake mixture.
