- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup freeze-dried strawberries, crushed into small pieces
- 1/4 cup white chocolate chips (optional)
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer to beat until smooth and creamy. Set aside.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and additional vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the crushed freeze-dried strawberries and white chocolate chips if using.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop about one tablespoon of cookie dough into your hands and flatten it slightly. Place about one teaspoon of cream cheese filling in the center of each flattened dough piece. Carefully fold the edges of the dough over the filling to encase it completely.
