  • 2 lbs boneless chicken breasts (or thighs)
  • 1 egg
  • 3/4 cup cornstarch
  • 1/3 cup all-purpose flour
  • 1/2 cup white distilled vinegar
  • 1/2 cup cane sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic (crushed)
  • 1 tbsp orange juice concentrate

Instructions

  1. Cut chicken into bite-sized pieces. In a bowl, whisk together egg, salt, pepper, sunflower oil, cornstarch, and flour. Coat chicken pieces evenly with the mixture.
  2. Heat oil in a deep fryer or heavy pot to about 350°F (175°C). Fry chicken in batches until golden brown (5–7 minutes). Drain on paper towels.
  3. For the sauce, combine vinegar, sugar, water, soy sauce, garlic, orange juice concentrate, and crushed red pepper flakes in a saucepan. Simmer until thickened.
  4. Toss fried chicken in the sauce until well-coated.
  5. Serve over rice or vegetables.
