  • 1 lb. ground chicken
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 3 tablespoons olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • Fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté onion in 1 tablespoon olive oil over medium heat until translucent (about 5 minutes). Add garlic and cook for an additional 30 seconds. Remove from heat.
  2. In a large bowl, combine sautéed onion and garlic with ground chicken, spinach, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper until well mixed.
  3. Shape the mixture into approximately eight patties about ½ inch thick.
  4. Heat remaining olive oil in a skillet over medium heat. Cook patties for about 5–6 minutes on each side until golden brown and cooked through.
  5. Drain on paper towels and serve warm.
