  • 1 tablespoon avocado oil

  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • ½ tablespoon ginger paste or 1-inch fresh ginger, grated
  • 1 tablespoon peanut butter
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha, optional
  • 3 tablespoons warm water
  • 2 teaspoons toasted avocado oil
  • 2 teaspoons brown sugar
  • For serving: cucumbers, carrots, avocado, fresh herbs (cilantro, mint, green onions), crushed peanuts, sriracha mayo, lime wedges

Instructions

  1. 1. Heat avocado oil in a skillet over medium-high heat. Cook ground chicken until fully cooked (5–6 minutes) and season with salt and pepper. Whisk sauce ingredients separately.
  2. 2. In another skillet, cook chopped kimchi in avocado oil until softened and caramelized (about 5 minutes). Add brown sugar during cooking.
  3. 3. Slice cucumbers and carrots; chop fresh herbs and crushed peanuts.
  4. 4. Warm tortillas, then layer chicken, caramelized kimchi, veggies, avocado, herbs, crushed peanuts, and drizzle of sriracha mayo on top.
