- 1 lb ground beef
- 2 large Yukon gold potatoes (diced)
- 1 large yellow onion (diced)
- 2 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 1 cup frozen baby peas
- 14 oz can fire-roasted diced tomatoes
- 14 oz can full-fat coconut milk
- 1 tsp sea or kosher salt
- 1 tsp cracked black pepper
- 1 1/2 tbsp curry powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1 tbsp tomato paste
Instructions
- Preheat oven to 425°F. Toss diced potatoes with olive oil and roast on a parchment-lined baking sheet for 25-30 minutes until golden brown.
- In a Dutch oven over medium-high heat, cook ground beef and diced onion until beef is browned and onions are translucent (about 6-7 minutes). Add minced garlic and grated ginger; sauté for another 1-2 minutes.
- Stir in spices (salt, cracked black pepper, curry powder, garam masala, turmeric) and tomato paste; cook for 2 minutes to release aromas.
- Combine fire-roasted tomatoes and coconut milk; bring to a boil then reduce heat to simmer for about 10 minutes until thickened.
- Add roasted potatoes and frozen peas; simmer for an additional 2-3 minutes until heated through.
