  • ½ cup milk
  • ½ cup water
  • 80 g unsalted butter
  • ½ tsp salt
  • 2 tsp sugar
  • 150 g all-purpose flour
  • 4 eggs
  • 2 cups milk (for diplomat cream)
  • 2 eggs (for diplomat cream)
  • ⅔ cup sugar (for diplomat cream)
  • 50 g cornstarch
  • 2 tsp vanilla extract
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a saucepan, combine milk, water, butter, salt, and sugar over medium heat until melted.
  3. Stir in flour until the mixture forms a ball. Allow to cool slightly before adding eggs one at a time.
  4. Spread half of the choux pastry onto a lined baking sheet and bake for 25-30 minutes until golden.
  5. For the diplomat cream, whisk together egg yolks, sugar, cornstarch, and vanilla in one bowl; gradually add warm milk from another saucepan while whisking.
  6. Return to heat and cook until thickened.
  7. Once cooled, layer choux pastry and diplomat cream on serving plate; dust with powdered sugar before serving.
