- ½ cup water
- 80 g unsalted butter
- ½ tsp salt
- 2 tsp sugar
- 150 g all-purpose flour
- 4 eggs
- 2 cups milk (for diplomat cream)

- ⅔ cup sugar (for diplomat cream)
- 50 g cornstarch
- 2 tsp vanilla extract
- Powdered sugar (for garnish)
Instructions
- Preheat your oven to 200°C (400°F).
- In a saucepan, combine milk, water, butter, salt, and sugar over medium heat until melted.
- Stir in flour until the mixture forms a ball. Allow to cool slightly before adding eggs one at a time.
- Spread half of the choux pastry onto a lined baking sheet and bake for 25-30 minutes until golden.
- For the diplomat cream, whisk together egg yolks, sugar, cornstarch, and vanilla in one bowl; gradually add warm milk from another saucepan while whisking.
- Return to heat and cook until thickened.
- Once cooled, layer choux pastry and diplomat cream on serving plate; dust with powdered sugar before serving.
