  • 12 vanilla wafer cookies
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup seedless raspberry jam
  • Fresh raspberries for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.
  2. Place one vanilla wafer cookie at the bottom of each liner.
  3. In a mixing bowl, beat the softened cream cheese and sugar until smooth.
  4. Mix in the eggs one at a time, followed by the vanilla extract and sour cream.
  5. Fill each cupcake liner about 3/4 full with the cheesecake batter.
  6. Top each with a teaspoon of raspberry jam and swirl gently using a toothpick.
  7. Bake for 20-25 minutes until edges are set but centers are slightly jiggly.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack. Chill for at least 2 hours before serving.
