  • 1 medium onion, diced

  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 can (28 ounces) diced tomatoes (with juice)
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup ditalini pasta
  • 1 cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  3. Stir in dried oregano and basil for flavor.
  4. Add canned tomatoes, chicken broth, and water; bring to a simmer.
  5. Return the cooked sausage to the pot and let the mixture simmer for about 20 minutes.
  6. Add ditalini pasta and cook until al dente.
  7. Stir in heavy cream and fresh spinach; cook until heated through.
