  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 cans (14.5 oz each) beef broth
  • 1 can (10 oz) condensed tomato soup
  • 1 can (15 oz) petite diced tomatoes (with juice)
  • 2 cups Yukon yellow potatoes (peeled and chopped)
  • 1 bag (16 oz) frozen mixed vegetables
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • ½ teaspoon dried basil

Instructions

  1. In a large soup pot over medium-high heat, brown the ground beef with the onion and garlic until the meat is no longer pink; drain excess grease.
  2. Add potatoes, beef broth, tomato soup, diced tomatoes, mixed vegetables, Worcestershire sauce, parsley, and basil. Stir well and bring to a boil.
  3. Reduce heat to medium-low, cover, and let simmer for at least 30 minutes.
