  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese

  • 1 clove garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg, beaten
  • 1 tablespoon olive oil (for cooking)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • Zest and juice of 1 lemon
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, minced garlic, oregano, salt, pepper, and beaten egg. Mix until combined and shape into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat and cook meatballs for about 10–12 minutes until browned and cooked through.
  3. In a saucepan, heat olive oil over medium heat; add rice and toast for 2–3 minutes until golden. Pour in chicken broth with lemon zest and juice; bring to a boil then reduce heat to low. Cover and simmer for 15–20 minutes.
  4. Fluff rice with a fork, stir in chopped dill, and season to taste. Serve meatballs over rice.
