  • 4 boneless, skinless chicken breasts (1 lb)
  • 2 medium sweet potatoes, peeled and cubed (1 lb)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp blackening seasoning (paprika, cayenne pepper, garlic powder, onion powder)
  • 1 cup bell peppers, chopped
  • 1 medium red onion, sliced

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato cubes in 1 tbsp olive oil with salt and pepper; spread on one side of the baking sheet.
  3. Coat chicken breasts in remaining olive oil and rub with blackening seasoning; place on the baking sheet with sweet potatoes.
  4. Roast for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C) and sweet potatoes are tender.
  5. While roasting, sauté bell peppers and onions in a skillet over medium heat until caramelized (5-7 minutes).
  6. Slice chicken and assemble bowls by layering sweet potatoes, sautéed vegetables, and chicken.
