Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- ¾ cup light cream or half-and-half
- ½ cup grated parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet over medium heat, heat the olive oil and butter. Sear the chicken for 4–5 minutes on each side until golden brown. Remove from skillet.
- In the same skillet, sauté garlic and sun-dried tomatoes for about 30 seconds.
- Add chicken broth and cream, stirring to combine. Gradually mix in parmesan cheese and Italian seasoning. Simmer until thickened.
- Return the chicken to the skillet and cook for an additional 6–8 minutes until fully cooked through.
