Ingredients
- 1 head cauliflower, chopped into florets
- 1 bulb garlic, roasted
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cups vegetable broth
- 1 cup milk or cream
- 2 cups sharp cheddar cheese, shredded
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wrap the garlic bulb in aluminum foil with olive oil and roast for 30-35 minutes until soft.
- In a large pot over medium heat, sauté diced onion in olive oil until translucent (5-7 minutes).
- Add cauliflower and vegetable broth; bring to a boil. Reduce heat and simmer until cauliflower is tender (about 20 minutes).
