Ingredients

Scale
  • 1 ½ cups crushed chocolate cookies
  • 5 tablespoons unsalted butter
  • 24 oz full-fat cream cheese
  • 1 cup granulated sugar
  • ¾ cup sour cream
  • 1 tablespoon vanilla extract
  • 1 tablespoon espresso powder
  • 2 tablespoons hot water
  • ¼ teaspoon salt
  • 3 large eggs

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and line with parchment paper.
  2. Combine crushed chocolate cookies and melted butter in a bowl; press the mixture into the bottom of the pan. Bake for 10 minutes and let cool.
  3. In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing until combined.
  4. Dissolve espresso powder in hot water and mix in sour cream, vanilla extract, and salt. Add to the cream cheese mixture and blend well.
  5. Add eggs one at a time, mixing just until incorporated.
  6. Pour batter over the cooled crust and tap gently to release air bubbles.
  7. Bake for 55 to 65 minutes until edges are set but center jiggles slightly.
  8. Turn off oven, crack open the door, and let cool for an hour before refrigerating for at least 6 hours or overnight.
