  • 55 g light brown sugar
  • 65 g granulated sugar
  • 1 tsp vanilla extract
  • 65 g all-purpose flour
  • 15 g cocoa powder
  • 2¼ tsp powdered gelatine
  • 400 g fresh raspberries
  • 480 ml heavy cream

Instructions

  1. Preheat oven to 180°C (350°F) and grease a 9-inch baking pan.
  2. Whisk eggs, sugars, and vanilla until thick. Fold in sifted flour, cocoa powder, and melted chocolate.
  3. Bake for 20 minutes until a skewer comes out clean; cool completely.
  4. For the mousse, dissolve gelatine in lemon juice. Blend raspberries with sugar; strain.
  5. Mix gelatine into raspberry puree and fold into whipped cream.
  6. Pour mousse over cooled sponge; refrigerate for at least 4 hours to set.
