- 1/2 cup unsalted butter (browned)
- 1/4 cup + 2 tablespoons granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 3/4 cup old-fashioned rolled oats
- 3/4 cup finely grated carrot (about 2–3 medium carrots)
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 1/4 cup cream cheese (chilled)
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine browned butter, granulated sugar, and brown sugar until smooth. Add egg and vanilla; mix well.
- In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually add dry ingredients to wet mixture until fully combined. Fold in grated carrots.
- Drop spoonfuls of dough onto the prepared baking sheet about two inches apart. Bake for 10 minutes or until golden brown.
- While cookies cool, prepare the cream cheese filling by beating softened butter and chilled cream cheese until smooth. Gradually add powdered sugar and vanilla until fluffy.
- Once cookies are cool, spread cream cheese filling on one cookie and top with another to create a sandwich.
