  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 3/4 cup finely grated carrot (about 23 medium carrots)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup cream cheese (chilled)
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine browned butter, granulated sugar, and brown sugar until smooth. Add egg and vanilla; mix well.
  3. In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually add dry ingredients to wet mixture until fully combined. Fold in grated carrots.
  4. Drop spoonfuls of dough onto the prepared baking sheet about two inches apart. Bake for 10 minutes or until golden brown.
  5. While cookies cool, prepare the cream cheese filling by beating softened butter and chilled cream cheese until smooth. Gradually add powdered sugar and vanilla until fluffy.
  6. Once cookies are cool, spread cream cheese filling on one cookie and top with another to create a sandwich.
