Ingredients
- 3 large organic grapefruits
- 3 cups filtered water (plus extra for blanching)
- 3 cups granulated sugar (plus extra for rolling)
Instructions
- Wash grapefruits thoroughly and carefully slice off the peels, keeping some white pith intact.
- Cut peels into strips about 1/2 inch wide.
- Blanch the strips in boiling water for 10 minutes, then transfer to an ice water bath to halt cooking.
- In a large pot, combine 3 cups of water with 3 cups of sugar over medium heat until dissolved.
- Add blanched peels back to the pot; simmer on low for 60–70 minutes until translucent.
- Remove peels using a slotted spoon and place them on a parchment-lined baking sheet. Allow to dry for an hour before rolling in sugar.
